Here's something I tried over the weekend. I've run out of ideas of what to use to kill a sweettooth craving...did a little reading and tweaking and came up with this. Its delicious, and good for you.
What you'll need:
* 1 can light coconut milk
* 1/2 cup sweetener (I used splenda, the original recipe calls for honey)
* 1 tsp. cinnamon
* 1 tsp. nutmeg
* 1 tsp. ground cloves
* 1 tsp vanilla extract
* 1/2 cup raisins
* 2 cups cooked quinoa
* 1/4 cup light silken tofu
* 1 cup skim milk.
* 8 scoops vanilla
protein powder
What to do:
Heat first seven ingredients in a large saucepan over medium-low heat. Stir in cooked quinoa (1 1/4 cup uncooked will expand to about 2 cups once cooked...to cook quinoa simply boil it with 1 part quinoa to 2 parts water for 15-20 minutes over medium heat until it is soft and appears translucent).
Combine tofu,
protein and milk in a blender or food processor until smooth. Stir it into the previous mixture.. Continue cooking over medium-low heat until mixture thickens and becomes the consistency of rice pudding. Serve at room temp.
Makes 8 servings @ 193 calories, 4 g fat, 1 mg cholesterol, 38 g carbohydrate, 2 g fiber, 30 g
